Cook the Meats

In a skillet over medium heat, cook the bacon until crispy, then remove and drain on paper towels. In the same skillet, cook the sausage links until browned and cooked through. Finally, add the ham slices to the skillet just to warm them up. Once done, chop all the meats into small pieces.

Scramble the Eggs

In a bowl, beat the eggs and season with salt and pepper. Pour the eggs into a non-stick skillet over medium heat and scramble until fully cooked and fluffy.

Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out into a bowl. Mash it slightly with a fork and season with a pinch of salt.

Assemble the Wrap

Lay out a large tortilla. In the center, add a portion of scrambled eggs, chopped bacon, ham, and sausage. Add a scoop of braised beans, mashed avocado, a spoonful of salsa, a handful of spinach, and a drizzle of chipotle mayo.

Wrap It Up

Carefully fold in the sides of the tortilla over the filling, then roll from the bottom up to enclose everything tightly. Repeat with the second tortilla.

Slice the wraps in half and serve immediately with extra salsa and chipotle mayo on the side if desired.
