Waffle Batter
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.
In a separate medium bowl, beat the eggs briefly until mixed. Add the whole milk, melted unsalted butter, and vanilla extract to the eggs and whisk until uniform.
Make a well in the dry ingredients and pour the wet mixture into it. Gently stir with a spatula until just combined. The batter should be slightly lumpy — do not overmix to keep waffles light.
Let the batter rest for 5–10 minutes at room temperature. This allows the baking powder to activate and the gluten to relax, producing fluffier waffles.
If your waffle iron requires a specific batter consistency, add up to 2 tablespoons additional milk if the batter seems very thick. Conversely, if too thin, add 1–2 tablespoons flour.
Cooking Waffles
When the waffle iron is hot, pour an appropriate amount of batter (about 1/2 to 3/4 cup depending on the size of your iron) onto the center of the lower plate. Close the lid and cook according to the iron's instructions, typically 3–5 minutes, until the waffle is deep golden brown and crisp.
Carefully remove the waffle using a heatproof spatula or tongs and transfer to a wire rack set over a baking sheet to keep crisp. Repeat with remaining batter, brushing the plates with a little melted butter between batches if needed to prevent sticking.
If making waffles ahead, keep cooked waffles warm and crisp in a 200°F (95°C) oven on the wire rack for up to 20–30 minutes, or freeze in a single layer for longer storage.
For Serving
Place a warm Belgian waffle on a plate. Add 1 tablespoon of softened unsalted butter and allow it to melt over the waffle.
Drizzle 2–3 tablespoons (or to taste) of pure maple syrup over the waffle. If serving multiple waffles, distribute the butter and syrup accordingly (about 1 tablespoon butter and 2–3 tablespoons syrup per waffle).
Optionally dust with confectioners' sugar and garnish with fresh berries. Serve immediately while hot and crisp.
