Method

Main

1

Prepare mango

If using fresh mangoes: peel and chop 1 large ripe mango (about 1 to 1 1/4 cups chopped). Place mango pieces in a blender and puree until smooth. If using store-bought mango puree, measure 1 cup.

2

Sweeten and season

Add 2 tablespoons granulated sugar, 1 teaspoon honey, and 1 teaspoon fresh lime juice to the blender with the mango puree. Blend briefly to dissolve sugar and combine flavors.

3

Add yogurt and milk

Add 1 cup plain yogurt and 1 cup cold milk to the mango mixture. Add 1 teaspoon ground cardamom. Secure the blender lid.

4

Blend with ice

Add 6 ice cubes to the blender. Blend on high for 30–45 seconds until the mixture is very smooth, frothy and slightly thickened. Taste and adjust: if you prefer thinner lassi, add up to 1/4 cup more milk; for sweeter, add up to 1 tablespoon more sugar or honey.

5

Chill (optional)

If not serving immediately, chill the lassi in the refrigerator for 15–30 minutes to let flavors meld. Stir or re-blend briefly before serving.

6

Serve

Pour the mango lassi into 2 tall glasses, leaving a little headspace for garnish. The recipe yields about 2 servings.

Garnish

7

Sprinkle about 1 teaspoon chopped pistachios over each glass and add a mint leaf. Finish with a light pinch of ground cardamom to enhance aroma.
