Method
Goat Cheese Biscuit
Prepare the Dough
In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
Add Goat Cheese
Gently fold in the crumbled goat cheese.
Add Milk
Gradually stir in the milk until just combined. Do not overmix.
Shape the Biscuits
Turn the dough out onto a floured surface and pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter or a glass.
Bake the Biscuits
Place the biscuits on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 15-20 minutes until golden.

In a cocktail shaker, combine the cognac, Cointreau, and fresh lemon juice with ice. Shake well and strain into a chilled glass.

In a small bowl, mix together chili powder, lime juice, and salt. Adjust seasoning to taste.
