To Prepare the Louisiana Bayou Cake

Make the Cake Batter

In a large bowl, combine ground alligator, cornmeal, flour, baking powder, paprika, salt, and black pepper. Mix well.

In another bowl, beat the eggs and mix in milk and vegetable oil.

Combine Mixtures

Gradually add the wet ingredients into the dry ingredients, stirring until just combined.

Bake

Pour the batter into a greased cake pan and bake at 350°F (175°C) for 25-30 minutes or until a toothpick comes out clean.

To Prepare the Poblano Aïoli

Blend Ingredients

In a food processor, combine roasted poblanos, mayonnaise, garlic, lemon juice, and salt. Blend until smooth.

In a bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Toss the frisée, apple slices, and dollops of cream cheese with the dressing.
