Prepare the Short Ribs

Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the short ribs on all sides until browned, about 3-4 minutes per side.

Roast the Short Ribs

Transfer the seared short ribs to a roasting pan. Cover with foil and roast in the preheated oven for 3 hours, until the meat is tender and falls off the bone.

Prepare Duck Fat Potatoes

While the ribs are roasting, peel and cut the potatoes into wedges. In a large bowl, toss the potato wedges with duck fat, salt, and black pepper. Spread them evenly on a baking sheet.

Roast the Potatoes

Once the short ribs have been in the oven for 2.5 hours, add the potatoes to the oven and roast for 30-40 minutes until crispy and golden brown.

Make Confit Garlic

In a small saucepan, combine garlic cloves and enough duck fat to cover them. Cook over low heat for about 30 minutes until the garlic is soft and lightly golden. Remove from heat and set aside.

Prepare Herb Breadcrumbs

In a bowl, mix fresh herbs with breadcrumbs. Drizzle with olive oil and toss to combine.

Serve

Once the short ribs are done, remove from the oven and let rest for 10 minutes. Serve the ribs with duck fat potatoes, confit garlic, and sprinkle herb breadcrumbs on top.
