Country Gumbo Recipe
Cajun country's most famous soup with as many variations as there are cooks. Chef Ricky's version features free range chicken with andouille sausage and tasso, simmered in a rich broth.

Prepare Proteins

Pat the chicken pieces dry and season lightly with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

In a large heavy Dutch oven over medium-high heat, add 1 tablespoon of the vegetable oil. Brown the chicken in batches (skin side down first) about 3–4 minutes per side until golden but not cooked through. Transfer browned chicken to a plate.

Add the andouille slices to the pot and brown for 2–3 minutes until edges char slightly; remove with a slotted spoon and reserve with the chicken. Add the diced tasso and sauté 1–2 minutes to render fat and develop flavor; remove and reserve with the other meats.
Make the Roux & Sofrito

Lower heat to medium. Wipe out excess fat if more than 2 tablespoons remain, leaving about 1–2 tablespoons plus any rendered tasso fat for flavor. Add the remaining vegetable oil (if needed) and heat until shimmering.

Sprinkle the flour into the hot oil and stir constantly with a wooden spoon or whisk to form a roux. Cook the roux, stirring constantly, until it reaches the color of peanut butter to a light caramel (about 8–12 minutes). Take care not to burn; reduce heat if it darkens too quickly.

Deglaze & Simmer

If using, pour in the white wine to deglaze the bottom of the pot, scraping up browned bits; let it reduce by half (1–2 minutes).

Slowly whisk in the chicken stock and water, incorporating the roux so the broth is smooth. Bring to a gentle simmer.

Return the reserved chicken, andouille, and tasso to the pot. Add bay leaves, thyme, smoked paprika, Cajun seasoning, remaining 1 teaspoon salt, 3/4 teaspoon black pepper, and hot sauce. Partially cover and simmer gently for 35–45 minutes, until chicken is cooked through and tender and flavors meld. Skim any excess fat from the surface as needed.
Finish & Adjust

Remove the chicken pieces to a cutting board. When cool enough to handle, debone and shred or chop the meat into bite-sized pieces; discard bones and skin. Return the chicken meat to the pot and stir.

Taste the gumbo and adjust seasoning with salt, pepper, and more Cajun seasoning or hot sauce as desired. If using, sprinkle file powder and stir in just before serving (do not boil after adding).

Stir in chopped parsley and sliced green onions, reserving a little for garnish. Keep the gumbo at a gentle simmer for another 5 minutes to blend.
Serve

Ladle gumbo over hot cooked white rice into bowls. Garnish with additional green onions and parsley and serve with lemon wedges on the side for a bright finish.

Leftovers keep well refrigerated up to 3–4 days; flavors often deepen overnight. Reheat gently on the stove, adding a splash of water or stock if too thick.
