Preparation of the Fish

    Season the haddock fillets with salt and black pepper. Heat olive oil in a pan over medium heat and cook the fish for about 4-5 minutes on each side until cooked through and golden brown.

    In another pan, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook, stirring occasionally, until apples are soft and caramelized, about 10 minutes.

Rissoles

    Boil potatoes until tender, then drain and mash. Mix in flour, beaten egg, salt, and black pepper to form a dough. Shape into small patties and fry in butter until golden brown on both sides.
