Prepare the Marinade

In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. This will be the marinade for the lamb.

Marinate the Lamb

Rub the marinade all over the lamb rack, ensuring it is well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the Oven

Preheat your oven to 375°F (190°C).

Sear the Lamb

In a large skillet, heat a bit of olive oil over medium-high heat. Sear the lamb rack on all sides until browned, about 3-4 minutes per side.

Roast the Lamb

Transfer the seared lamb rack to a roasting pan. Pour the red wine into the pan and place in the preheated oven. Roast for about 25-30 minutes for medium-rare doneness, or until it reaches your desired temperature.
