Prepare the Ingredients

Wash and dice the heirloom tomatoes. Set aside.

Cook the Petite Filet

Heat olive oil in a skillet over medium-high heat. Season petite filets with salt and black pepper on both sides. Sear the filets for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Prepare the Creamed Corn

In the same skillet, add the creamless Gutt farm creamed corn. Stir occasionally and heat through for about 5 minutes.

Plate the Dish

On each plate, place a portion of the creamed corn, top with diced heirloom tomatoes, and then place the rested petite filet on top. Drizzle with Calabrian chili butter.

Garnish and Serve

Sprinkle cotija cheese over the top and serve immediately.
