Prepare the Peaches

Preheat your oven to 350°F (175°C). Peel and slice the fresh peaches, then place them in a large bowl. Toss the peaches with half of the granulated sugar (1/2 cup) and set aside to macerate for about 10 minutes.

Make the Batter

In another bowl, combine the remaining granulated sugar, flour, baking powder, salt, and cinnamon. In a separate cup, mix the milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Assemble the Cobbler

Pour the batter into a greased 9x13 inch baking dish. Spoon the macerated peaches over the batter, ensuring even distribution. Do not stir.

Bake

Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the peaches are bubbly.

Serve with Lemon Curd and Ice Cream

Let the cobbler cool for a few minutes before serving. Top each serving with a dollop of lemon curd and a scoop of mascarpone ice cream.
