Prepare the Cure
In a bowl, mix together the sea salt, brown sugar, and black pepper.
Cure the Salmon
Place the salmon fillet in a dish and rub the salt mixture all over the fish. Cover it with plastic wrap and refrigerate for 24-48 hours, depending on how cured you want it.
Rinse and Dry
After curing, remove the salmon from the refrigerator, rinse off the salt mixture under cold water, and pat dry with paper towels.
Add Flavor
Drizzle the truffle oil over the salmon and sprinkle with fresh dill and lemon zest.
Slice and Serve
Using a sharp knife, slice the salmon thinly and serve it with crackers or on a salad.
