Blend the Foie Gras

In a food processor, blend the foie gras until smooth.

Prepare the Cream Mixture

In a saucepan, heat the heavy cream over medium heat until just below boiling. Remove from heat and let it cool slightly.

Combine Ingredients

In a mixing bowl, whisk together the egg yolks, sugar, salt, and black pepper. Gradually add the warm cream to the egg mixture, whisking continuously to prevent curdling.

Add Foie Gras

Fold the blended foie gras into the cream and egg mixture until fully combined.

Baking

Prepare Ramekins

Preheat the oven to 150°C (300°F). Pour the mixture into ramekins, filling them about 3/4 full.

Water Bath

Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Bake

Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is still slightly jiggly.

Cool

Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours, or overnight.

Prepare for Serving

Before serving, sprinkle a thin layer of sugar on top of each crème brûlée.

Using a kitchen torch, caramelize the sugar until it forms a crispy top. Let it sit for a minute before serving.
