1. Prepare the Kofka Skewers

In a large bowl, combine the ground lamb, ground beef, onion, garlic, parsley, cumin, paprika, salt, black pepper, and olive oil. Mix well until all ingredients are thoroughly combined.

2. Form the Skewers

Divide the meat mixture into equal portions and mold them around the soaked wooden skewers to form elongated shapes.

3. Cook the Skewers

Preheat a grill or grill pan over medium-high heat. Grill the kofka skewers for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks.

4. Prepare the Tzatziki Sauce

In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt. Adjust seasoning to taste and set aside.
