Sorbet Bleuet
Prepare the Blueberry Mixture
In a blender, combine fresh blueberries, granulated sugar, lemon juice, and water. Blend until smooth.
Chill the Mixture
Pour the blueberry mixture into a bowl and refrigerate for at least 2 hours, or until chilled.
Freeze the Sorbet
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 4 hours.
Sablé Chocolat
Prepare the Dough
In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until combined.
Add Dry Ingredients
Sift together the all-purpose flour, cocoa powder, and salt. Gradually add to the butter mixture, mixing until a dough forms.
Chill the Dough
Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour.
Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds and place them on a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until set. Let cool completely.
