Prepare oven and equipment

Preheat oven to 275°F (135°C). Line a baking sheet with parchment paper. Draw a 7-inch (18 cm) circle on the back of the parchment as a guide, then flip paper so ink is underneath.

Beat egg whites

In a completely clean, dry bowl with a whisk or stand mixer fitted with the whisk attachment, begin beating the 4 large egg whites on medium speed until soft peaks form (about 2–3 minutes).

Incorporate sugar

With the mixer running, add the 1 cup granulated sugar 1 tablespoon at a time, allowing sugar to dissolve and peaks to become glossy and stiff (total 4–6 minutes). To test, rub a pinch between fingertips — it should feel smooth, not gritty.

Stabilize meringue

Sprinkle in 1 tsp cornstarch, 1 tsp white wine vinegar, 1 tsp vanilla extract and a pinch of fine sea salt. Fold briefly on low speed or with a spatula until incorporated, keeping the meringue glossy and stable.

Shape the pavlova

Spoon the meringue onto the parchment within the drawn circle and use a spatula to form a round nest with a slightly indented center to hold the cream and berries. Smooth edges but leave some rustic peaks for a fairytale look.

Bake and cool

Bake at 275°F (135°C) for 50–60 minutes until the exterior is dry to the touch and lightly pale. Turn the oven off, crack the oven door slightly, and let the pavlova cool completely inside the oven (at least 2 hours) to avoid cracking from sudden temperature change.

Chill bowl and beaters

Place the mixing bowl and beaters in the refrigerator for 10–15 minutes prior to whipping to ensure cold equipment, which helps cream whip more easily.

Whip cream and mascarpone

Combine 1 cup heavy cream, 3 tbsp mascarpone, 2 tbsp powdered sugar and 1 tsp vanilla extract in the chilled bowl. Beat on medium-high speed until soft peaks form, about 2–3 minutes. Do not overbeat — the mixture should be light but hold its shape.

Taste and adjust

Taste and if you prefer slightly sweeter cream, add up to 1 more tablespoon powdered sugar and fold gently to combine.

Fairytale Forest Berry Medley

Prepare berries

Place 1 cup hulled and quartered strawberries, 3 oz raspberries, 3 oz blueberries and 3 oz blackberries in a medium bowl. Gently toss to combine.

Dress berries

Drizzle 1 tbsp honey and 1 tsp lemon juice over the berries, add 1 tsp orange zest, then gently toss to coat. Let sit 10–15 minutes so flavors marry and some juices form to create a light syrup.

Garnish & Assembly

Assemble pavlova

Carefully transfer the cooled pavlova base to a serving plate. Spoon the whipped forest cream into the center nest, spreading it slightly but leaving airy peaks for texture.

Top with berries

Spoon the dressed forest berry medley over the cream, allowing some of the berry syrup to drizzle into the cream and the pavlova base.

Garnish

Scatter 2 tbsp toasted sliced almonds around the berries for crunch, tuck 8 mint leaves artistically, and place 6 edible flowers on top for a fairytale look. If using, drizzle 1 tbsp berry coulis around the plate for color.

Serve immediately for best texture — crisp edges and marshmallow interior with cool cream and fresh berries. If you must hold, refrigerate for up to 2 hours; note the pavlova will soften as it sits.
