Slice aromatics
Peel and thinly slice the ginger and garlic. Slice the white and light-green parts of the green onions on a bias. Add half of the ginger and half of the garlic to the mushroom bowl and toss to distribute.

Make the steaming sauce
In a small bowl whisk together the soy sauce, mirin (or dry sherry), water or vegetable broth, sesame oil, rice vinegar, sugar or honey (if using), cracked black pepper and the coarse salt until combined. Taste and adjust—it should be slightly savory and balanced (not too salty because it will concentrate during steaming).
Arrange mushrooms for steaming
Choose a wide shallow heatproof dish or a bamboo/metal steamer basket that fits over a pot. Spread the mushroom mixture in an even single layer if possible. Scatter the remaining sliced ginger and garlic across the top so aromatics steam through the mushrooms.
Steam the mushrooms
Fill a wide pot with about 2–3 cm of water (enough to create steam but not touch the dish), bring to a gentle boil. Place a steaming rack or trivet in the pot and set the mushroom-filled dish or steamer basket on top. Cover with a tight-fitting lid to trap steam. Steam over medium-high heat for 6–8 minutes for tender small mushrooms, or 8–10 minutes for larger pieces—mushrooms should be tender and glossy and release fragrant steam when you lift the lid. Avoid oversteaming so they don’t become waterlogged.

If you prefer a slightly thicker sauce, carefully remove the mushroom dish and transfer the steaming liquid to a small saucepan. Simmer over medium heat 2–3 minutes until it slightly reduces and thickens. Stir in the sesame oil and remove from heat. Spoon the reduced sauce back over the mushrooms.
Garnish and serve
Scatter the sliced green onions, toasted sesame seeds, and chopped cilantro or parsley over the steamed mushrooms. Taste and adjust seasoning with additional salt, pepper, or a few drops of soy sauce if needed. Serve immediately as a side dish or over steamed rice, noodles, or as part of a composed plate.
