Prepare aromatics
Finely chop the onion and parsley. Mince the garlic. Place the chopped onion in a medium skillet over medium heat with no oil and sauté, stirring frequently, until softened and translucent, about 5 minutes. Remove from heat and let cool to room temperature (this prevents the pastry from becoming soggy).
Mix the filling
In a large bowl combine the sausage meat (or ground pork), cooled sautéed onion, minced garlic, chopped parsley, Dijon mustard, soy sauce, Worcestershire sauce, ground black pepper, kosher salt, grated nutmeg, and chili flakes if using. Add 2 tablespoons cold water or milk to loosen and keep the mixture moist. Use your hands or a wooden spoon to mix until ingredients are evenly distributed and the mixture is slightly tacky, about 1–2 minutes. Do not overwork.
Shape log
Divide the filling into two equal portions. Shape each portion into a compact log roughly the length of your pastry sheet (about 20–25 cm / 8–10 in) and 4–5 cm (1.5–2 in) in diameter. Place the logs on a tray and chill in the refrigerator for 15–20 minutes; chilling firms the filling and makes rolling easier.

Prepare pastry
Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper. Lightly dust your work surface with the all-purpose flour. Unfold a puff pastry sheet and roll gently into a rectangle about 2–3 mm thicker and large enough to fully encase the sausage log with a small seam. Repeat with the second sheet for the second log.
Wrap the filling
Place one chilled sausage log lengthwise along the lower third of a pastry rectangle. Brush a thin line of beaten egg wash (whisk the large egg with 1 teaspoon cold water) along the upper edge of the pastry to act as glue. Fold the bottom edge up over the sausage and roll firmly but gently to form a tight seam. Seal the long seam and the two ends by pressing and crimping with your fingers or a fork. Trim any excess pastry and use the trimmings to decorate the top if desired (cut thin strips to make a lattice or mystical runes). Repeat with the second log.
Score and egg wash
Place the assembled rolls seam-side down on the prepared baking sheet. Lightly score the tops with a sharp knife in diagonal slashes—do not cut all the way through; this allows steam to escape. Brush the entire surface liberally with egg wash. Sprinkle sesame or poppy seeds on top if using. For a shiny, slightly sweet finish mix brown sugar with maple syrup and brush a thin line along the top before popping into the oven (optional).
Baking & finishing
Bake
Bake in the preheated oven for 25–30 minutes, rotating the tray halfway through, until the pastry is puffed and deep golden brown and an instant-read thermometer inserted into the center of the sausage reads 70°C (160°F). If the pastry browns too quickly, tent loosely with foil for the remaining time.
Rest and serve
Remove from oven and let rest on the baking sheet for 8–10 minutes to allow juices to redistribute. Transfer to a cutting board and slice into portions. Serve warm with mustard, chutney, or a dipping sauce of choice.
