Citrus-Apple Base
Juice the oranges and grapefruit if you're using fresh fruit. Measure 1.5 cups orange juice and 1/2 cup grapefruit juice. If using store-bought juices, choose 100% juice without added sugar.
Combine the orange juice, grapefruit juice and 1 cup apple juice in a large pitcher. Stir gently to blend the primary flavors.

Add 2 tablespoons fresh lemon juice to the pitcher to brighten the mixture and prevent oxidation of the apple juice.
Peel and grate about 1 tablespoon fresh ginger (adjust to preference). Add the grated ginger to the pitcher. The ginger adds warmth and a spicy counterpoint to the sweet fruit juices.
Lightly bruise the mint leaves to release aroma: place leaves between your palms and clap once or gently crush with a muddler. Add 6–8 leaves to the pitcher for a fresh herbal lift.
Stir in 1 tablespoon honey or agave (more or less to taste) until dissolved. If honey is stiff, dissolve it first in the 1/2 cup cold water to make a simple syrup-like mixture for easier blending.
Balance & Texture
Taste the combined juices. If the blend is too sharp, add up to 1/4 cup additional apple juice. If too sweet, add another tablespoon lemon juice or a splash (1–2 tbs) of cold water.
Add a pinch of sea salt to round out flavors and enhance sweetness perception. Stir well and let the mixture rest in the refrigerator for at least 10 minutes to allow flavors to marry (30 minutes if time allows).
When ready to serve, fill a pitcher or individual glasses with ice cubes (about 1 cup total). Pour the juice mixture over the ice to chill and slightly dilute for balanced texture.

Optional: For a sparkling version, replace the 1/2 cup cold water with 1/2 cup chilled sparkling water and add it just before serving to retain effervescence.
