Sparkling & Citrus
Method
Sparkling & Citrus
- 1
Chill components
Place the bottle of sparkling wine and the freshly squeezed orange juice in the refrigerator for at least 2 hours so both are thoroughly chilled. Alternatively, chill in an ice bucket for 20โ30 minutes prior to serving. Do not shake the sparkling wine.
- 2
Prepare glassware and garnishes
If using, chill flute glasses in the refrigerator for 10โ15 minutes. Slice the orange into thin wheels or twist peels and set aside. If using berries, wash and pat dry; hull strawberries and halve if large.
- 3
Strain juice
If you haven't already, squeeze fresh oranges and strain the juice through a fine-mesh strainer to remove pulp and seeds for a cleaner presentation. Measure out the orange juice.
- 4
Assemble individual mimosas (standard ratio)
Pour 1/2 cup (120 ml) of chilled sparkling wine into a chilled champagne flute. Gently pour 1/2 cup (120 ml) of chilled fresh orange juice down the side of the glass so it mixes slowly and preserves bubbles. Do not stir; a gentle pour minimizes foam and keeps the drink effervescent.
- 5
Alternative: Batch for a small group
In a chilled pitcher, combine 1 cup of chilled sparkling wine and 1 cup of chilled orange juice for two standard mimosas. If serving immediately to more guests, multiply the quantities keeping a 1:1 ratio and cross-chill the pitcher. Add ice to the pitcher only if you anticipate a long serving time, and remove ice before pouring to avoid diluting drinks.
- 6
Garnish and serve
Garnish each flute with an orange slice or twist on the rim or drop a halved strawberry or a raspberry into the drink for color and aroma. Serve immediately while the sparkling wine is still lively.

Notes on proportions and variations
Traditional mimosa is 1:1 sparkling wine to orange juice. For a lighter, bubblier mimosa, use a 3:1 ratio (3 parts sparkling to 1 part juice). For a sweeter twist, use blood orange or add a small splash (1โ2 tsp) of orange liqueur. For a nonalcoholic version, substitute chilled sparkling water or nonalcoholic sparkling wine in equal measure.
