Color, Aroma & Garnish
Method
Prep & Muddle
- 1
- 2
Place 3 fresh blackberries into a cocktail shaker or mixing glass. Muddle gently with the back of a spoon or a muddler until broken down but not completely pulverized — you want some texture to release juice and aroma.
Build & Shake
- 3
Add the spirits to the shaker: 2 oz vodka, 0.75 oz Hungarian plum pálinka (or slivovitz), and 0.5 oz dry curaçao.
- 4
Add modifiers: 0.5 oz freshly squeezed lemon juice, 0.5 oz blackberry syrup, and 0.25 oz honey syrup. If using egg white (0.5 of a large egg white) for a silkier texture and a frothy head, add it now.
- 5
If you want the deep midnight color, sprinkle a very small pinch (about 1/8 to 1/4 tsp) of activated charcoal into the shaker and stir once to distribute — charcoal is optional and should be used sparingly. Alternatively use a single drop of black food coloring.
- 6
- 7
Add ice to the shaker (about 1 cup) and shake hard for 12–15 seconds until the shaker is cold to the touch and well chilled.
Double Strain & Serve
- 8
Discard ice or water from the chilled serving glass. Double-strain the cocktail into the chilled coupe/martini glass using a Hawthorne strainer and a fine mesh strainer to remove seeds and pulp for a smooth finish.
- 9
Express the oils of a lemon peel over the surface by holding it skin-side down above the drink and giving it a firm twist, then run the peel around the rim and drop it into the cocktail or lay it as a twist.
- 10
Garnish with a whole blackberry perched on the rim or a star anise floated on the foam for aroma. If you used egg white and achieved a foam, you can gently press a blackberry into the foam for visual contrast.
