1. Chill glass

Place a coupe or Nick & Nora glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

2. Make honey syrup (if not ready)

Combine 2 parts honey and 1 part hot water, stir until fully combined and let cool. Measure out 0.5 oz for this recipe.

3. Combine ingredients

In a cocktail shaker add 2 oz dry gin, 0.5 oz Averna (or chosen amaro), 0.25 oz Yellow Chartreuse, 0.75 oz fresh lemon juice, 0.5 oz honey syrup, and 2 dashes orange bitters.

4. Add ice and shake

Fill the shaker with ice (about 1 cup or enough to chill). Seal and shake vigorously for 12–18 seconds until the shaker is cold to the touch and the mixture is well diluted and frothy from the citrus.

5. Strain

Empty the ice water from the chilled glass if used. Double strain the cocktail through a fine mesh strainer into the chilled coupe or Nick & Nora glass to remove small ice shards and any pulp.

6. Garnish and serve

Express a fresh lemon twist over the drink to release the oils, run the twist around the rim if desired, then drop it into the glass. Serve immediately.
