Jamaica (Hibiscus) Granita

    Steep hibiscus

    Combine dried hibiscus flowers, 4 cups water, and a pinch of salt in a medium saucepan. Bring to a simmer over medium heat, then remove from heat and let steep, covered, for 15 minutes.

    Sweeten and strain

    Strain the hibiscus infusion through a fine-mesh sieve into a bowl, pressing to extract liquid. While warm, stir in 1 cup granulated sugar until dissolved. Add 2 tablespoons fresh lime juice, taste and adjust sugar or lime if needed. Cool to room temperature, then chill in the refrigerator until cold (at least 1 hour).

    Freeze and scrape

    Pour chilled hibiscus liquid into a shallow metal baking tray (no more than 1-inch deep). Freeze until edges are solid and center is slushy, about 1–2 hours depending on freezer. Every 30–45 minutes, scrape the forming crystals with a fork to create flaky ice. Continue until fully crystalline and fluffy (about 3–4 cycles). Keep frozen until ready to serve; scrape again briefly before plating to loosen crystals.

Guava Sorbet

    Make simple syrup

    Combine 1 cup sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring, until sugar dissolves completely. Remove from heat and cool to room temperature.

    Blend and chill

    In a blender, combine 2 cups strained guava puree, cooled simple syrup, 1 tablespoon lime juice, 1 tablespoon light corn syrup (if using), and a pinch of salt. Blend until very smooth. Taste and adjust sweetness or acidity. Chill the mixture thoroughly in the refrigerator (at least 1 hour) so it is very cold before churning.

    Churn or freeze

    Pour cold guava mixture into an ice cream maker and churn according to manufacturer instructions until soft-sorbet consistency (typically 20–30 minutes). If you don't have an ice cream maker: pour mixture into a shallow container, freeze for 30–45 minutes until edges are set, then stir vigorously with a fork or hand mixer to break crystals; repeat every 30 minutes until smooth and scoopable. Transfer sorbet to an airtight container and freeze 2–4 hours to firm up to serving texture. Remove from freezer 5–10 minutes before scooping.

Raspberry Caviar (Spherified Raspberry Pearls)

    Prepare raspberry base

    In a blender, puree 1 cup raspberries with 2 tablespoons water and 1 teaspoon sugar until smooth. Pass through a fine sieve to remove seeds, pressing to extract as much liquid as possible. You should have about 3/4 to 1 cup raspberry liquid. Stir in 1 teaspoon calcium lactate gluconate until fully dissolved. Chill the raspberry-calcium mix for 20–30 minutes so it is cold.

    Make alginate bath

    In a tall container, whisk 1 teaspoon sodium alginate into 2 cups cold water using an immersion blender or vigorous whisk until fully hydrated and no clumps remain. Let the alginate bath rest for 20–30 minutes to remove air bubbles and hydrate, occasionally smoothing the surface.

    Form pearls (reverse spherification)

    Using a small syringe, pipette, or squeeze bottle, draw raspberry-calcium liquid and carefully drop small droplets (4–6 mm) into the alginate bath from 1–2 inches above the surface. Let the droplets sit in the bath for 60–90 seconds to form a thin gel membrane. Gently strain the pearls with a slotted spoon and transfer to a bowl of cold water to rinse for 30 seconds, removing any residual alginate flavor. Keep pearls refrigerated and use within a few hours (they will continue to gel over time).

Assembly & Serving

    Portion the elements: For each serving (makes 4 servings), scoop or spoon 2 large tablespoons of guava sorbet into chilled small serving glasses or coupe dishes placed in the freezer briefly beforehand to keep them cold.

    Add Jamaica granita: Nestle a generous spoonful (about 3–4 tablespoons) of hibiscus granita next to the sorbet so the colors contrast. The granita provides a flaky, bright counterpoint to the smooth sorbet.

    Top with raspberry caviar: Scatter 10–12 raspberry pearls over the sorbet and granita per serving, concentrating a few on top of the sorbet for visual impact.

    Garnish and finish: Add 2 fresh mint leaves and one lime wedge per serving. Serve immediately with a small spoon. If not serving right away, keep components chilled separately and assemble just before presenting.
