Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the carrots.
Wash the Carrots
Thoroughly wash the heirloom carrots under cold running water. Remove any dirt and trim the tops, leaving about an inch of the green tops for presentation.
Season the Carrots
In a large mixing bowl, combine the washed carrots with olive oil, sea salt, black pepper, fresh thyme, and balsamic vinegar. Toss until the carrots are evenly coated with the seasoning.
Roasting
Arrange on Baking Sheet
Place the seasoned carrots in a single layer on a baking sheet, ensuring they are not overcrowded to allow for even cooking.
Roast the Carrots
Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, turning them halfway through for even roasting.
Serving
Plate the Carrots
Once roasted, remove the carrots from the oven and let them cool slightly. Transfer to a serving platter.
Garnish and Serve
Sprinkle the chopped fresh parsley over the roasted carrots for garnish. Serve warm and enjoy the oak-fired flavors!
