Prepare the Pork

Pound the pork loin chops to an even thickness of about 1/2 inch using a meat mallet. Season with salt, black pepper, and paprika on both sides.

Set Up Breading Station

In three shallow dishes, place the flour in the first, beaten eggs in the second, and bread crumbs in the third.

Bread the Chops

Coat each pork chop in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with bread crumbs. Ensure they are fully covered.

Fry the Schnitzels

Heat oil in a large skillet over medium heat. Fry the breaded pork chops for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Mustard Sauce

In a small bowl, whisk together the dijon mustard, mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth and well combined.
