Prepare the Bacon Jam

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add chopped onion and cook until translucent. Add minced garlic and cook for another minute. Chop the bacon and return it to the skillet. Stir in maple syrup, bourbon, apple cider vinegar, and black pepper. Simmer for 15-20 minutes until thickened. Set aside.

Cook the Burgers

Preheat a grill or skillet to medium-high heat. In a bowl, combine the ground beef, salt, and black pepper. Form into 4 patties. Grill or pan-fry the burgers for about 4-5 minutes on each side, or until desired doneness. Add a slice of cheddar cheese on top in the last minute of cooking to melt.

Assemble the Burgers

Toast the burger buns if desired. Place the cooked burger patties on the bottom half of each bun. Top generously with the maple-bourbon bacon jam, then place the top half of the bun on each burger. Serve immediately.
