    Heat and culture

    Pour the whole milk into a medium heavy-bottomed saucepan and heat gently over medium until it reaches 180°F (steam rising but not boiling) or until it just begins to simmer. Remove from heat.

    Add culture

    Stir in the buttermilk (or plain yogurt) and the optional cream, cover the pot, and let sit undisturbed at room temperature for 6–12 hours until the milk has thickened and separated into curds and whey.

    Strain curds

    Line a fine-mesh strainer with cheesecloth and place over a bowl. Gently ladle curds into the cloth and let drain for 1–2 hours until the desired consistency (shorter for creamier, longer for drier).

    Season

    Transfer drained curds to a bowl, stir in 1/2 tsp salt (adjust to taste) and fold to combine. Chill while you prepare other components. Yield: about 1.5–2 cups requéson.

Frijolitos (seasoned mashed beans)

    Heat 1 tablespoon oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, 4–5 minutes. Add minced garlic and cook 30–45 seconds until fragrant.

    Add the cooked beans, cumin, salt, and pepper. Stir to combine and cook 2–3 minutes to heat through. Remove from heat and add lime juice.

    Use a potato masher or the back of a spoon to mash the beans to a coarse purée, leaving some texture. If mixture is too thick, add 1–2 tablespoons water or reserved bean liquid. Keep warm.

Charred seasonal vegetables

    Preheat a grill, cast-iron skillet, or broiler to high. Toss sliced zucchini, pepper quarters, and tomatoes (if using) with 1 tablespoon olive oil, 1/2 tsp salt, and smoked paprika if using.

    Char vegetables directly on the hot grill or skillet, turning occasionally, until blistered and blackened in spots and tender, 6–10 minutes depending on veg. For peppers, char until skin is blackened all over, then transfer to a bowl and cover to steam for 5 minutes; peel and slice into strips.

    Slice charred zucchini into bite-sized pieces and halve or quarter tomatoes. Toss lightly with a pinch of salt and set aside.

Masa and assembly

    Combine masa harina and 1 tsp salt in a large bowl. Add melted lard or shortening and mix. Gradually add hot water, a little at a time, and mix with a spoon or your hand until a soft, pliable dough forms. Dough should be moist but not sticky; if too dry, add up to 1/4 cup more water; if too sticky, add 1–2 tablespoons masa harina.

    Divide the dough into 8 equal portions (about 2.5–3 oz each) and roll into balls. Keep covered with a damp towel to prevent drying.

    Flatten each ball between two sheets of plastic wrap or in a tortilla press lined with plastic to an oval about 5–6 inches long and 1/8 inch thick. Spoon about 2 tablespoons of the prepared requéson onto one end of the oval, fold or roll the masa over to encase the filling, forming a rustic purse or half-moon (tetela shape). Pinch edges to seal well. Alternatively, place on a corn husk and fold into a triangular pocket, pressing edges to close.

    Lightly oil a griddle or nonstick skillet and heat to medium. Cook each tetela seam-side down first, 2–3 minutes until set and slightly golden. Flip and cook the other side 2–3 minutes more, pressing gently with a spatula to ensure even cooking. Total cook time 4–6 minutes per tetela. If desired, cover for 30–60 seconds to ensure the center heats through.

    Transfer cooked tetelas to a warm plate while you finish the rest. Keep covered to stay warm.

Finishing and plating

    Place 1 tetela on each plate. Spoon 1/4 cup warm frijolitos over or beside each tetela.

    Top with a generous portion of charred seasonal vegetables (about 1/4 cup), sprinkle with crumbled queso fresco (about 1–2 tablespoons), and scatter chopped cilantro.

    Serve with lime wedges on the side for squeezing. Adjust salt to taste. Optional: drizzle a little olive oil or warmed chile oil over the vegetables for extra richness.
