Mezcal Margarita

Prepare the glass
Rub a lime wedge around the rim of a rocks or coupe glass. Mix smoked sea salt on a small plate and dip the rim into the salt to coat. Set the glass aside.

Shake
In a cocktail shaker filled with ice, combine 2 oz mezcal, 1 oz fresh lime juice, 0.75 oz orange liqueur, and 0.5 oz agave syrup. Shake vigorously for 12–15 seconds until well chilled.

Prepare the rim
On a small plate, combine fine salt with a pinch of chili powder. Rub a lime wedge around the rim of a highball or rocks glass and dip into the chili-salt to coat. Fill the glass with ice.

Build the cocktail
In a shaker with ice combine 2 oz blanco tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice and 0.25 oz agave syrup. Shake briefly (6–8 seconds) to mix and chill.

Smoky Pineapple Mezcal Smash

Muddle
In a shaker or mixing glass, add 3 oz fresh pineapple chunks, 6 mint leaves and 0.5 oz agave syrup. Gently muddle to release juices and aroma — avoid pulverizing the mint.

Add spirits & shake
Add 1.75 oz mezcal, 0.75 oz fresh lime juice and a handful of crushed ice to the shaker. Shake vigorously for 10–12 seconds to chill and slightly dilute.

Serve
Dump the contents (including crushed ice and fruit) into a rocks glass. Garnish with a sprig of mint and a maraschino cherry. Optionally, top with a small spray of mezcal for added smoke on the nose.

Rinse tools immediately after use. For best flavor, use fresh citrus and fresh-squeezed juices. Adjust agave to taste depending on the sweetness of fruit and personal preference. When rotating cocktails, keep mezcal-forward drinks for heartier dishes and brighter tequila cocktails for lighter fare.
