Prepare the Eggplant
Slice the eggplants into 1/2-inch thick rounds and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.
Preheat Oven
Preheat your oven to 375°F (190°C).
Rinse and Dry
After 30 minutes, rinse the eggplant slices under cold water to remove excess salt. Pat them dry with paper towels.
Bread the Eggplant
Dip each eggplant slice in olive oil and then coat with breadcrumbs.
Bake the Eggplant
Place the breaded eggplant slices on a baking sheet and bake for 25-30 minutes until golden brown.
Layer the Ingredients
In a large baking dish, layer the baked eggplant slices, homemade pasta sauce, mozzarella cheese, and Parmesan cheese. Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
Bake Again
Bake the layered dish in the oven for an additional 30-35 minutes until the cheese is bubbly and golden.
Garnish and Serve
Let the Eggplant Parmesan cool for a few minutes. Garnish with fresh basil and black pepper before serving.
