BBQ Potato Preparation

Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash and peel the potatoes, then cut them into bite-sized cubes.

Cook the Potatoes

Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 10-12 minutes, or until slightly tender but still firm. Drain and set aside.

Prepare the Veggies

Finely chop the chives, mince the garlic, and dice the red pepper and red onion.

Mix Everything Together

In a large bowl, combine the cooked potatoes, garlic, red pepper, red onion, and BBQ sauce. Mix until well coated.

Bake the Mixture

Transfer the potato mixture to a greased baking dish. Bake in the preheated oven for 20-25 minutes until the potatoes are golden brown.

Add Cheese

Remove the baking dish from the oven and sprinkle mozzarella cheese on top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve

Remove from the oven, sprinkle with fresh chives, and let cool slightly before serving. Enjoy your BBQ potatoes!
