Method

Stew

  1. 1

    Prepare beef

Pat the beef cubes dry with paper towels. Season evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Toss the beef with 2 tablespoons flour until lightly coated; shake off excess.

  2. 2

    Brown the beef

Heat a large heavy-bottomed pot or Dutch oven over medium-high heat. Add 2 tablespoons oil. When shimmering, add half the beef in a single layer (don't crowd). Sear 2–3 minutes per side until browned; transfer to a bowl. Repeat with remaining beef, adding more oil if needed. Set browned beef aside.

  3. 3

    Sweat aromatics

Reduce heat to medium and add 1 tablespoon butter to the pot. Add the diced onion and a pinch of salt; cook 4–5 minutes until translucent. Add the minced garlic and cook 30–45 seconds until fragrant.

  4. 4

    Cook carrots and mushrooms

Add the carrots and mushrooms to the pot. Cook, stirring occasionally, 4–5 minutes until mushrooms begin to release liquid and carrots start to soften.

  5. 5

    Deglaze and build sauce

Stir in 1 tablespoon tomato paste and cook 1 minute. Pour in 1 cup dry red wine to deglaze, scraping up browned bits from the bottom with a wooden spoon. Allow wine to reduce by about half, 2–4 minutes.

  6. 6

    Add liquids and seasonings

Return the browned beef and any accumulated juices to the pot. Add 3 cups beef broth, 1 teaspoon Worcestershire sauce, 3 sprigs fresh thyme, and 1 bay leaf. Bring to a low simmer.

  7. 7

    Simmer until tender

Cover partially with a lid and simmer gently over low heat for 1 to 1.25 hours, stirring occasionally, until beef is fork-tender and carrots are cooked through. If the stew reduces too quickly, add up to 1/2 cup additional broth or water.

  8. 8

    Finish and thicken (optional)

If you prefer a thicker sauce, mix 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Stir slurry into the simmering stew, cook 2–3 minutes until sauce thickens. Discard thyme sprigs and bay leaf. Taste and adjust seasoning with additional salt and pepper as needed.

  9. 9

    Garnish

Stir in 2 tablespoons chopped fresh parsley just before serving.

Noodles (side)

  1. 10

    Boil water

Bring 6 cups water to a rolling boil in a large pot. Add 1 teaspoon kosher salt.

  2. 11

    Cook noodles

Add 8 ounces egg noodles and cook according to package directions until al dente (usually 6–8 minutes). Stir occasionally to prevent sticking.

  3. 12

    Drain and toss

Reserve 1/4 cup cooking water if you want to loosen noodles with stew later. Drain noodles in a colander and return to the pot. Toss with 1 teaspoon butter if desired. Keep covered until ready to serve.

  4. 13

    Serving suggestion

Ladle stew into bowls and serve noodles on the side. For gluten-free diners, omit the noodles and serve stew over cooked gluten-free rice or gluten-free pasta, or serve as-is.
