Prepare glass and tools

Chill a stem glass in the freezer for 5 minutes. Set up an absinthe spoon with a sugar cube perched over the glass and have an absinthe fountain or absinthe tower ready for slow water delivery.

Pour 30 ml of Grande Absente Absinthe Original into the chilled glass.

Balance 1 sugar cube on the bowl of the absinthe spoon and rest the spoon above the glass so the cube sits directly over the opening.

Using the absinthe tower, slowly drizzle about 120 ml of ice-cold water through the sugar cube, allowing it to dissolve and the absinthe to louche into a milky emerald cloud.

Flambé the sugar cube

Carefully ignite the sugar cube with a long lighter and let it burn briefly to caramelize. Keep the flame away from your face and flammable materials; extinguish the flame when the cube has caramelized and just before it risks popping.

Finish and serve

Gently swirl the glass to mix the caramelized sugar with the diluted absinthe. Serve immediately and enjoy the strong licorice aroma characteristic of absinthe.
