Rinse and measure
Quickly rinse the dried rosella calyces in a fine-mesh sieve under cool running water to remove dust. Drain well and measure 2 cups.

Crush whole spices
Lightly crush the cardamom pods and cloves with the side of a knife or a small mortar and pestle to open them and release aroma. Keep the cinnamon stick whole.

Once boiling, reduce heat to low and simmer, uncovered, for 10–12 minutes until the liquid turns a deep ruby color and the rosella has softened and infused the water.

Turn off the heat and stir in the granulated sugar until fully dissolved. If you prefer less sweet, start with 3/4 cup sugar and adjust later. Add fresh lime juice and stir to combine.

Allow the mixture to cool at room temperature for 20–30 minutes to let flavors meld and the syrup to concentrate slightly.

Strain the mixture through a fine-mesh sieve or cheesecloth into a heatproof bowl or pitcher, pressing gently on the solids to extract as much liquid as possible. Discard solids. Taste and adjust sweetness or acidity (add optional honey or more lime) as desired.

If serving immediately as a cold drink: fill a large pitcher or individual glasses with ice. For each 8-oz (240 ml) serving, combine about 1/2 cup (120 ml) rosella syrup with 1 cup (240 ml) cold water or sparkling water. Stir and taste; adjust ratio if you prefer stronger or lighter.

Garnish each glass with 2 fresh mint leaves and a lime wedge. Optionally, lightly clap the mint between your palms before adding to release aroma.

For a chilled concentrate: refrigerate the strained rosella syrup in a sealed container. To serve later, dilute 1 part syrup to 2–3 parts cold water or sparkling water, adjust sweetness, add ice and garnish as above.

Serve immediately. Leftover syrup will keep refrigerated for up to 7 days; stir before using.
