Prep & station setup

    Chill tasting glasses and highball/cocktail glasses in refrigerator or freezer for 10–15 minutes. Fill service ice bucket with cubed ice. Arrange spirits by type (blanco, reposado, añejo, mezcal) on a clean surface with labels facing guests for a tasting flight.

    Cut limes and oranges into wedges and slices. Place cilantro sprigs and jalapeño slices on a small tray for garnish options. Put coarse sea salt and tajín into shallow dishes for rimming glasses.

Flight service (tequila & mezcal tasting)

    Pouring the flight

    Pour 30 ml (1 oz) of each spirit into individual small tasting glasses or copitas. Typical flight: Blanco tequila, Reposado tequila, Añejo tequila, Espadín mezcal, optional Pechuga mezcal. Leave space for guests to smell and sip each spirit.

    Recommend tasting order: start with the lightest (blanco), then reposado, then mezcal, finishing with añejo or the more intensely flavored artisanal mezcal. Encourage smelling first, then small sips to note heat, smoke, sweetness, and finish.

Classic Margarita (makes 4 cocktails)

    Salt or tajín-rim 4 highball glasses if desired. Fill each glass with ice. In a pitcher combine 240 ml blanco tequila, 240 ml fresh grapefruit juice, 60 ml fresh lime juice, 60 ml agave nectar, and 240 ml club soda. Stir gently to combine.

    Pour into prepared glasses and top with remaining club soda if needed. Garnish with a grapefruit wheel or lime wedge. For a mezcal Paloma, replace tequila with 240 ml mezcal for a smoky variation.

Mezcal Sour (makes 2 cocktails)

    Chill two coupe or rocks glasses. In a shaker without ice, combine 120 ml mezcal, 40 ml fresh lime juice, 20 ml fresh grapefruit juice, 30 ml simple syrup, 1 egg white (optional), and 2 dashes Angostura bitters. Dry-shake (no ice) vigorously for 15 seconds to emulsify if using egg white.

    Add ice to the shaker and shake again for 10–15 seconds until chilled. Double-strain into the chilled glasses. Garnish with a few drops of Angostura bitters on the foam and, if desired, a small cilantro sprig or thin jalapeño slice.
