Preparation

Mixing
- 2
Add the blended Scotch (2 oz), overproof rum (0.5 oz), dry vermouth (0.5 oz), allspice dram (0.25 oz), fresh lemon juice (0.75 oz), and cane syrup (0.5 oz) into a cocktail shaker.
- 3
Add Angostura bitters (2 dashes) and orange bitters (1 dash) to the shaker.
- 4
Fill the shaker with ice (about 1 cup) and seal. Shake vigorously for 12–18 seconds, until the shaker is well-chilled and slightly frosted. This both chills and dilutes the mix to balance the spirits and citrus.
- 5
If you prefer the drink served on the rocks, fill a rocks glass with fresh ice (about 1/2 cup) and set aside; otherwise remove the chilled coupe from the freezer.
- 6
Double-strain the cocktail into the chilled coupe (or over the fresh ice in the rocks glass) using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp.
Garnish & finish
- 7
Express the oils of an orange peel over the surface of the drink by holding the peel skin-side down above the glass and giving it a firm twist. Optional: quickly pass the peel over an open lighter or match to lightly flame the oils (careful with flames). Rub the peel around the rim and drop it into the drink.
- 8
Optionally grate a tiny pinch of fresh nutmeg over the top (about 1/8–1/4 tsp) for an aromatic finish. Serve immediately.
