In a large mash tun, combine the pale malt, crystal malt, and carapils malt with 5 gallons of filtered water. Heat the water to approximately 165°F (73°C) and add the grains.

Prepare the Mash

Hold the mash at 152°F (67°C) for 60 minutes. Stir occasionally to ensure even temperature throughout the mash.

Mashing Process

After mashing, sparge the grains with hot water at 170°F (77°C) until you collect about 6-7 gallons of wort in your brew kettle.

Sparging

Bring the wort to a rolling boil and add the Cascade hops. Boil for 60 minutes.

Boil the Wort

At 15 minutes remaining in the boil, add the Centennial hops. At 5 minutes remaining, add the Chinook hops.

Add Other Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American ale yeast.

Transfer to Fermenter

Seal the fermenter and allow it to ferment at a stable temperature of around 68-72°F (20-22°C) for 1-2 weeks or until fermentation is complete.

Fermentation

After fermentation, dissolve the priming sugar in a small amount of boiling water to create a syrup and allow it to cool.

Prepare for Bottling

Add the priming sugar syrup to the fermenter, then bottle the beer using sanitized bottles and caps.

Bottle the Beer

Let the bottles carbonate at room temperature for about 1-2 weeks.
