Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.

Add the Cheese

Reduce heat to low and add the cheddar, monterey jack, and parmesan cheeses to the sauce. Stir until melted and smooth. Season with salt, black pepper, and paprika.

Combine Pasta and Lobster

Fold the cooked macaroni and the chopped lobster meat into the cheese sauce until well combined.

Prepare for Baking

Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Sprinkle the top with bread crumbs and a little extra cheese if desired.

Bake

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.

Garnish and Serve

Remove from the oven, let cool for a few minutes, then garnish with chopped parsley before serving.
