Prepare the Lobster
In a large pot, bring salted water to a boil. Add the lobster tails and cook for about 5-7 minutes until they are bright red. Remove the lobster tails, let them cool, then remove the meat and chop into small pieces. Set aside.
Deglaze with Wine
Pour in the white wine and scrape the bottom of the pot to deglaze it. Let it simmer for about 5 minutes until the wine reduces by half.
Add Stock and Seasonings
Add the seafood stock, fresh thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 20 minutes.
Blend the Soup
Remove the bay leaf and use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
Finish with Cream
Stir in the heavy cream and the remaining 2 tablespoons of butter. Add the reserved lobster meat and heat through for an additional 5 minutes.
Serve
Ladle the bisque into bowls and serve hot, garnished with additional thyme if desired.
