Prepare the Spinach

In a skillet over medium heat, melt 1 tablespoon of butter. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper. Remove from heat and set aside.

Prepare the Egg Mixture

In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Cook the Omelet

In the same skillet, melt the remaining tablespoon of butter over medium-low heat. Pour the egg mixture into the skillet, tilting it to spread evenly. Cook for about 2-3 minutes until the edges start to set.

Add Fillings

Once the eggs are mostly set, add the sautéed spinach and the cold-water lobster meat evenly over one half of the omelet. Sprinkle fresh chives on top.

Fold and Serve

Carefully fold the omelet in half over the fillings. Cook for another minute until the lobster is heated through and the eggs are fully set. Slide onto a plate and serve immediately.
