Eggs & Seasoning

Method

Eggs & Seasoning

  1. 1

    Prepare and cook eggs

Bring eggs to room temperature for a few minutes if possible. Heat a nonstick skillet over medium-low heat and add 1 tsp unsalted butter. When butter is melted and foamy, crack two large eggs into the skillet. For sunny-side-up: cover skillet with a lid and cook 2.5–4 minutes until whites are set but yolks still runny. For over-easy: cook 2–3 minutes until whites mostly set, gently flip with a spatula and cook 20–30 seconds more. Season with a pinch of salt and pepper immediately after cooking.

Toast

  1. 2

    Toast bread

While eggs cook, toast two slices of bread in a toaster or under a broiler until golden and crisp (about 2–3 minutes). If you prefer, spread ~1 tsp butter on each slice while warm so it melts into the toast.

Fresh Fruit

  1. 3

    Prepare fruit

Rinse and dry fruit. If using berries, leave whole and gently pat dry. If using an apple or banana, slice into bite-size pieces. If using apples or bananas and you want to prevent browning, toss the slices with ~1 tsp lemon juice. Arrange about 1 cup of mixed fruit on the plate.

Assembly & Serve

  1. 4

Place the toast on a plate, set the cooked eggs on or beside the toast, and add the prepared fresh fruit. Serve immediately while eggs and toast are warm.
