    Preheat

    Position an oven rack in the middle and preheat the oven to 325°F (160°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.

    Prepare dry mix

    In a large mixing bowl, combine 3 cups rolled oats, 1 cup chopped raw almonds (roughly chopped to bite-size), 1/2 cup chopped raw pecans, 1/2 cup unsweetened shredded coconut, 1/4 cup pumpkin seeds, 1/4 cup sunflower seeds, 1 teaspoon ground cinnamon, and 1/2 teaspoon fine sea salt. Stir so ingredients are evenly distributed.

    Make wet mixture

    In a small bowl or measuring cup, whisk together 1/4 cup maple syrup, 2 tablespoons honey, 3 tablespoons neutral oil, and 1 teaspoon vanilla extract until smooth and slightly emulsified.

    Combine and coat

    Pour the wet mixture over the dry ingredients. Use a spatula or wooden spoon to fold and press until all dry ingredients are evenly coated and slightly clumping. Spread the mixture in an even layer on the prepared baking sheet, pressing gently with the back of the spatula to create clusters if desired.

    Bake

    Bake in the preheated oven for 18–25 minutes, stirring gently once halfway through (around 10–12 minutes). For chunkier clusters, do not over-stir—tilt and rotate the pan instead. Watch closely after 15 minutes so the coconut and nuts do not burn. The granola is done when golden brown and fragrant.

    Cool and add fruit

    Remove the pan from the oven and let the granola cool completely on the sheet (about 20–30 minutes). As it cools it will crisp and form clusters. Once cooled, stir in 1/2 cup dried cranberries or raisins if using.

    Transfer cooled granola to an airtight container. It will keep at room temperature for up to 2 weeks, or freeze for up to 3 months.

Yogurt & Assembly

    Portion yogurt

    Spoon 3 cups plain Greek yogurt into a medium bowl and gently stir to loosen if it is very thick. For individual servings, divide into 4 bowls (about 3/4 cup each).

    Add granola

    Top each portion of yogurt with about 3/4 to 1 cup of the homemade granola (adjust to taste). If making multiple servings, reserve the remainder in the container and add fresh to each bowl to keep it crunchy.

    Add fruit and toppings

    Scatter fresh berries (1 cup total) across the bowls and add sliced banana if using. Sprinkle toasted coconut flakes (2 tablespoons) and 1 teaspoon chia or flax seeds per bowl if desired. Drizzle each bowl lightly with honey or maple syrup (about 1/2 teaspoon to 1 teaspoon) if you prefer sweeter yogurt.

    Serve immediately so the granola stays crunchy. Leftover assembled bowls should be eaten within a few hours; store granola separately if making ahead.
