Baked Oat Base

    Preheat and prepare dish

    Preheat oven to 350°F (175°C). Lightly grease a 8x8-inch (or similar 9x9) baking dish with butter or oil and set aside.

    Mix dry ingredients

    In a large bowl, combine 2 cups rolled oats, 1/2 tsp baking powder, 1/2 tsp ground cinnamon, and 1/4 tsp salt. Stir until evenly distributed.

    Combine wet ingredients

    In a separate bowl or large measuring cup whisk together 1 1/2 cups almond milk, 1 large egg, 3 tbsp maple syrup (or honey), and 1 tsp vanilla extract until smooth.

    Assemble base

    Pour the wet mixture over the dry oats and stir to combine. Let sit 5 minutes to hydrate the oats slightly so mixture thickens.

Fruit & Nuts (mixed in and topping)

    Prepare fruit and nuts

    If using apples or larger fruit, dice into small pieces; if using berries, leave whole or halve large berries. Chop nuts coarsely. If using dried fruit, roughly chop larger pieces.

    Incorporate into batter

    Fold 1 cup seasonal fruit and 1/2 cup chopped nuts (and 1/4 cup dried fruit if using) into the oat mixture until evenly distributed. Reserve a small handful (about 2 tbsp) of nuts and fruit for sprinkling on top before baking.

    Optional flavor note

    For added warmth, sprinkle an extra 1/8 tsp cinnamon or a pinch of nutmeg into the mixture.

Bake & Finish

    Transfer and top

    Spoon the oat mixture into the prepared baking dish, pressing gently to level. Scatter the reserved fruit and nut pieces evenly across the surface.

    Bake

    Bake in the preheated 350°F (175°C) oven for 30–35 minutes, or until the top is golden and the center is set (a toothpick inserted in the center should come out mostly clean with just a few moist crumbs). If using very juicy fruit, you may need an extra 3–5 minutes.

    Cool slightly

    Remove from oven and let cool for 10 minutes in the dish so it firms up and is easier to portion.

    Serve

    Spoon portions onto plates or bowls and top each serving with about 2–3 tbsp (total 3/4 cup divided) plain or vanilla yogurt. Garnish with remaining fresh fruit (about 1/2 cup total) and drizzle with up to 1 tbsp maple syrup if desired.
