Prepare the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring frequently, until they are caramelized and golden brown.

Add Garlic and Wine

Add the minced garlic and cook for another minute. Pour in the dry white wine and let it simmer until almost evaporated.

Simmer the Broth

Add the beef broth, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.

Prepare the Bread

While the soup is simmering, preheat your oven to 350°F (175°C). Toast the sourdough slices until golden brown.

Assemble the Soup

Remove the bay leaf from the soup. Ladle the onion soup into oven-safe bowls. Place a slice of toasted sourdough bread on top of each bowl and generously sprinkle with Swiss and mozzarella cheeses.

Bake the Soup

Place the assembled bowls on a baking sheet and bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and golden.
