Prepare the Breakfast Potatoes

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast potatoes, season with salt and pepper, and cook until golden brown and crispy, about 10-15 minutes. Stir occasionally.

Cook the Bacon

In a separate pan, cook the bacon over medium heat until crispy. Remove and let drain on paper towels.

Grill the Tuscan Bread

In the same skillet used for the bacon, add another tablespoon of olive oil and grill the Tuscan bread slices until golden brown on both sides. Remove from heat.

Prepare the Spicy Tomato Sauce

In a saucepan, heat the spicy tomato sauce over low heat. Add red pepper flakes for extra spice if desired, and let it simmer.

Fry the Eggs

In the same skillet used for the bread, crack the eggs gently and fry them sunny-side up or to your desired doneness. Season with salt and black pepper.

Assemble the Dish

Place two slices of grilled Tuscan bread on each plate. Top with fried eggs, spoon over the spicy tomato sauce, and garnish with fresh basil. Serve with bacon and breakfast potatoes on the side.
