Combine and shake

Fill a cocktail shaker halfway with ice. Add white rum, fresh lime juice, fresh orange juice, pineapple juice, and simple syrup. Add Angostura bitters. Seal the shaker and shake vigorously for 12–15 seconds, until the shaker is cold to the touch.

Prepare glass

Fill a large old-fashioned glass or tiki mug with crushed ice, leaving a little room at the top for the blue curaçao and dark rum float.

Strain and layer

Strain the shaken mixture over the crushed ice. Slowly pour the blue curaçao over the back of a spoon onto the top of the drink so it sinks and creates a blue layer near the surface.

Float dark rum (optional)

Carefully float the dark rum on top by pouring it gently over the back of a bar spoon. This will create a dark 'island' effect in the blue layer.

Garnish & Finish

Garnish with an orange wheel, a maraschino cherry, and a sprig of mint. Serve with a straw and a short cocktail stirrer. Optionally, gently smack the mint between your hands before tucking it in to release aroma.

Serve immediately while cold. Encourage guests to stir lightly if they want to blend the float and blue curaçao into the base for a uniform flavor and color.
