Preheat and prepare

Preheat the oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat. Spread 2 cups of raw cashews in a single layer on the prepared sheet and set aside.

Make the golden glaze

In a small saucepan over low heat, melt 3 tablespoons unsalted butter. Once melted, add 3 tablespoons honey and 2 tablespoons light brown sugar. Stir continuously until the sugar dissolves and the mixture is glossy, about 2–3 minutes. Remove from heat and whisk in 1 teaspoon ground turmeric, 1 teaspoon smoked paprika, 1 teaspoon freshly grated ginger, 1 teaspoon black pepper, and 3 teaspoons sea salt until fully combined.

Coat the cashews

Pour the warm glaze evenly over the cashews on the baking sheet. Using a silicone spatula or wooden spoon, toss and stir the cashews on the sheet until they are evenly coated with the golden glaze.

Roast

Place the baking sheet in the preheated oven and roast for 10–12 minutes, stirring once halfway through (at about 6 minutes) to promote even browning. Watch closely in the final 2 minutes so the sugar does not scorch. The cashews should be aromatic and the glaze set but still slightly tacky when done.

Cool and separate

Remove the baking sheet from the oven and let the cashews cool on the sheet for 8–10 minutes. As they cool the glaze will harden slightly; use a spatula to separate any clusters so the nuts end up mostly individual.

Finishing & Optional

While cashews are still a little warm, sprinkle 1 tablespoon toasted sesame seeds evenly over them to adhere to the glaze. Add 2 tablespoons finely chopped fresh cilantro and 1 teaspoon lemon juice; toss gently to distribute. If you like heat, sprinkle up to 1 teaspoon chili flakes and toss again. Transfer the Golden Cashews to a serving bowl or an airtight container once completely cool.
