Protein (prepare chosen protein)

    Pulled pork or pulled chicken (pre-cooked)

    If using pre-cooked pulled pork or chicken, warm gently in a skillet or microwave until hot (internal temp ~165°F / 74°C). For extra flavor, toss 3 cups of the warmed meat with 1/2 cup BBQ sauce in the skillet over medium-low heat for 2–4 minutes until heated through and coated. Keep warm.

    Brisket chili

    If using brisket chili, warm 3 cups in a saucepan over medium heat, stirring occasionally, until simmering and thick (5–8 minutes). If chili seems dry, add 1–2 tablespoons water. Keep warm on lowest heat.

Base & chips

    Preheat oven to 400°F (205°C) if using oven method. Spread half of the tortilla chips in an even single layer on a large rimmed baking sheet or oven-safe platter (or arrange in a shallow oven-safe serving pan). Reserve the other half of the chips for stacking or a second layer.

    Spoon about half of the salsa in dollops across the chips; this anchors chips and prevents sogginess but still adds flavor. If serving in batches, keep extra salsa at room temperature or slightly warmed.

Assembly & cheese melt

    Layer 1. Distribute half of the warmed protein evenly over the first chip layer (if using two tiers, you can assemble in two stages).

    Layer 2. Sprinkle half of both shredded cheeses evenly over the meat and chips so cheese covers most chips. Add half of the sliced jalapeños and one-third of the green onions.

    Repeat. Add the remaining chips (or the remaining chips in clusters so chips overlap) to create a second layer. Spoon the remaining protein over the new chip layer, add remaining cheese, jalapeños, and green onions.

    Melt cheese. For oven method: place assembled sheet on center rack and bake 6–8 minutes until cheese is melted and bubbling. For broiler: broil 1.5–3 minutes watching carefully to avoid burning. For stovetop: heat a large skillet over low, place a lid and the assembled nachos inside the skillet (or use two stacked skillets) for 3–5 minutes until cheese melts. Remove when cheese is fully melted.

Finishing toppings

    Drizzle. Immediately after removing from heat, drizzle warmed 1/4–1/2 cup BBQ sauce lightly over the top in a few thin streams so it doesn't soak chips. Optionally add hot sauce to taste.

    Add fresh toppings. Scatter diced tomatoes, remaining green onions, chopped cilantro, and pickled red onions on top of the melted cheese. Add extra sliced jalapeños if desired.

    Sour cream & serve. Dollop sour cream across the nachos in 6–8 spoonfuls, or put sour cream in a squeeze bottle and lightly decorate. Serve immediately with lime wedges and remaining salsa on the side for scooping.

Notes & tips

    Portioning: The recipe quantities make a large shared platter (about 4–6 servings). To keep chips crispy, assemble and melt just before serving and avoid over-saucing.

    Substitutions & variations: Swap queso or pepper jack for extra heat, use corn or flour tortilla chips as preferred, or add black beans, corn, or avocado slices as optional toppings.
