If the bottle is at room temperature, chill the La Ferme du Vert “L’angelou” 2024 to 8–10°C (46–50°F). Place the bottle in an ice bucket half-filled with ice and water for about 15–20 minutes, or refrigerate for 2–3 hours. Mauzac Vert whites are best served cool but not icy to allow aromatic lift.

Chill

Visually inspect the bottle for clarity of label and seal. Wipe the top of the bottle with a clean cloth. Using a waiter’s corkscrew, remove the capsule and gently extract the cork. If the bottle has a screwcap, remove it cleanly and wipe the rim.

Inspect & Open

Pour a small 30–60 ml (1–2 oz) taste into one glass and hold it up to the light. Note the color: expect a pale straw to light gold typical of Mauzac Vert from Gaillac. Look for clarity and brightness.

Observe

Swirl the tasted pour gently to release aromatics. Put the glass to your nose and take several short inhalations. Note primary aromas (green apple, pear, citrus blossom, light herbaceous or floral notes) and any secondary notes (subtle yeast, brioche if there was any lees contact or oxidative character depending on vinification).

Swirl & Smell

Take a moderate sip, letting the wine move across the tongue. Assess acidity (Mauzac Vert tends to show fresh, crisp acidity), fruit concentration, body, and finish. Note any textural elements such as minerality or slight phenolic grip. If tasting multiple wines, cleanse the palate with water and a plain cracker between samples.

Taste & Assess

Pour wine into each guest’s glass about one-third full (120–150 ml per serving). If the tasting is casual, allow each guest to pour their own to desired level. Keep remaining bottle in the ice bucket to maintain the 8–10°C serving temperature. If the wine was chilled too cold and seems muted, allow it 5–10 minutes in the glass to warm slightly and open up.

Serve

Serve La Ferme du Vert “L’angelou” with light seafood (mussels, oysters, grilled white fish), goat cheese, fresh salads with citrus vinaigrette, charcuterie focused on mild cured meats, or simply with crusty bread and butter. For a tasting flight, present alongside other Gaillac whites or a Sauvignon Blanc to compare aromatics and acidity.

Pairing Suggestions

Recork the bottle using the original cork or a reusable wine stopper. Store upright in the refrigerator; the wine is best consumed within 2–3 days for freshness. If any oxidative or undesirable aromas develop, use within 24–48 hours.
