1. Chill the bottle
Place the unopened bottle of Guy Mea “L’Assemblage” 1er Cru NV Champagne in an ice bucket filled with ice and enough cold water to surround the bottle. Chill for 20–30 minutes. Alternatively, refrigerate upright for at least 3 hours prior to serving to reach an ideal serving temperature of 8–10°C (46–50°F).
2. Prepare glassware
Select clean, room-temperature Champagne flutes. Rinse each flute with a small amount of chilled water and discard; this removes dust and helps maintain a steady stream of bubbles. Do not chill the glasses in freezer — they can mute aroma.
3. Open the bottle safely
With the bottle chilled, keep it pointed away from people and fragile objects. Remove the foil and untwist the wire cage while keeping your thumb on the cork. Hold the cork and gently twist the bottle (not the cork) until the cork eases out with a quiet sigh rather than a loud pop. Wipe the lip of the bottle with a napkin.
4. Pour properly
Pour slowly into each flute, holding the glass at a slight angle and filling to about two-thirds. This helps preserve the mousse (foam) and concentrates the aroma. For a vertical tasting or to appreciate mousse, pour a small first measure (about 30–45 ml / 1–1.5 fl oz) into each glass, allow bubbles to develop, then top to two-thirds.
5. Serve and maintain temperature
Keep the remaining bottle in the ice bucket to maintain 8–10°C. If serving over a longer period, replace melted ice so the bottle stays chilled. Serve water and lemon wedges alongside, and offer light hors d'oeuvres (e.g., blinis with crème fraîche & smoked salmon) that complement the Pinot Noir/Chardonnay blend without overpowering it.
Tasting Notes & Etiquette
6. Observe the color: pour a small measure and note the pale gold with fine persistent streams of bubbles typical of a quality NV 1er Cru blend of Pinot Noir and Chardonnay.
7. Smell: gently swirl (or tilt) the glass and inhale to appreciate aromas—expect white orchard fruit, brioche, light toasty/autolytic notes and red-fruit hints from Pinot Noir.
