Method
Lemon Sponge Cake Preparation
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
Mix Dry Ingredients
In a bowl, combine flour, sugar, baking powder, and salt.
Whisk Eggs
In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until well combined.
Bake
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Cool
Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Peach Sauce Preparation
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together flour, powdered sugar, egg whites, melted butter, lemon zest, and lemon juice until smooth.
Spoon small amounts of the mixture onto the prepared baking sheet and spread thinly with a spatula.
Bake for about 8-10 minutes, or until the edges are golden brown.
Allow the cookies to cool slightly, then gently shape them while warm. Let cool completely on a wire rack.
