Method

Lemon Sponge Cake Preparation

Preheat Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix Dry Ingredients

In a bowl, combine flour, sugar, baking powder, and salt.

Whisk Eggs

In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until well combined.

Combine Mixtures

Gradually add the dry ingredients to the egg mixture, stirring until just combined. Fold in the melted butter.

Bake

Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Peach Sauce Preparation

Cook Peaches

In a saucepan, combine diced peaches, sugar, lemon juice, and water. Cook over medium heat for about 10 minutes until the peaches soften.

For a smoother sauce, blend the mixture until desired consistency is reached. Return to low heat to keep warm.
